INGREDIENTS
1 lb chicken breasts or drumsticks
¼ teaspoon garlic powder
Salt & pepper to taste
Flour
4 tablespoons butter
1 tablespoon olive oil
¼ cup chicken broth
1 tablespoon lemon juice + zest of 1 lemon
1 tablespoon brined capers
½ cup heavy whipping cream
Parsley, chopped
Freshly grated parmesan cheese
Separate for plating: 1 cup cooked rice
DIRECTIONS
Thinly slice the chicken breasts into cutlets and season generously with garlic powder, salt, and pepper. Coat the chicken in flour.
Add 2 tablespoons of butter and 1 tablespoon of olive oil to the KitchenAid® NITRO Carbon Steel Skillet over medium heat.
Once the skillet is hot, cook the chicken pieces for about 4-5 minutes per side until golden. Transfer the chicken to a plate.
Take the skillet off the heat and add 2 tablespoons of butter, chicken broth, lemon juice, lemon zest, and capers to the skillet.
Stir in the heavy whipping cream and return the skillet to medium heat. Once it's bubbling again, add the chicken back into the skillet.
Cook for another 5 minutes or until the chicken is cooked through and the sauce has reduced to your liking. If the sauce thickens too much, add more broth.
Garnish with freshly chopped parsley and parmesan cheese, then serve over rice.
