Chinese Chicken Salad

Make this ahead by preparing the dressing and salad parts separately. Keep the salad refrigerated until ready to toss with the dressing and serve.

INGREDIENTS

  • Brown sugar
  • Chopped Cilantro
  • Chopped roasted peanuts
  • Cooked chicken
  • For the Dressing:
  • Iceberg lettuce
  • Matchstick carrots
  • Minced fresh ginger
  • Seasoned rice vinegar
  • Sliced green onions
  • Soy sauce
  • Toasted sesame oil
  • Toasted sesame seeds

DIRECTIONS

  1. In a large bowl combine lettuce, chicken, onions, cilantro, carrots and peanuts. 
  2. Cover and refrigerate until ready to serve.
  3. Whisk together dressing ingredients. Toss with salad and serve immediately.
